Egg substitute for minced meat dumplings

I tried the egg substitute for the first time today. The recipe for my meatballs is simple. 500 gr. Minced meat, salt, pepper, nutmeg and 2 eggs I replaced the 2 eggs with the vegan egg substitute and let the pieces simmer in water for 10 minutes. Everything is mushy and tastes sour. Disappointment for the price of 23.40...!
