Especially in summer, there are great fruits that are ideal for a quick cake. This recipe uses blueberries, but you can also use any other type of fruit. You probably already have everything you need for this cake at home.

First, beat the eggs with the butter until frothy and add the sugar. Beat everything for about 5 minutes until creamy.

Then mix the dry ingredients, except for a tablespoon of flour.

Now add a spoonful of the dry ingredients to the cream mixture as well as some of the oat drink. Keep doing this until everything is well combined.

Mix the blueberries with the remaining flour.

Divide the batter into two bowls. Add the acai powder to one bowl and stir it in, and add the lemon zest and blueberries to the other. Preheat the oven to 180 °C and grease a loaf tin with coconut oil.

Now fill the dough alternately into the mold. Use a fork or a shashlik stick to pull through the batter a few times. Leave the cake to bake in the oven for 35 minutes.

You can also make the cake with any other fruit and replace the acai powder with matcha powder. This combination tastes particularly good if you use cherries. Or if you have frozen berries or red fruit jelly at home, these are also great for this cake. If you want to add a little more sweetness, you can decorate the cake with powdered sugar or icing.
