Chia pudding with coconut milk.

Step 1/3
Heat the coconut milk in a saucepan and add the sugar and vanilla extract. Remove the pot from the heat and stir in the chia seeds.

Fill into two glasses and let cool. Then you can eat the pudding immediately or you put it still in the refrigerator, so that it is really cold.

As a topping, you can add a fresh, diced mango or your favorite nut puree.
