Deep-fried gherkins? That sounds so absurd that you have to try it!

Mix the egg substitute powder with the water in one bowl, mix the flour with the spices in another bowl and finally crunch the cornflakes into a third bowl.

First dip one gherkin in the flour mixture, then (patiently) coat with the egg substitute and then dip in the cornflakes.

Heat the frying oil on a high heat and deep-fry the pickles for a few minutes until golden brown. Drain on kitchen paper.

To make the sauce, puree the vegan mayo, dill, finely chopped gherkin and a dash of cucumber water in a blender. Season to taste with salt and pepper.
