Looking for a taste adventure? Our vegan phở recipe is like a culinary trip to Vietnam - full of flavors, intense spices and wonderfully fragrant broth. We combine fresh ingredients, spicy mushrooms and our signature Mühlen fillet to create a super tasty and quick dish. Grab your wooden spoon and get ready for the ultimate pleasure trip!

First, prepare the vegan Mühlen fillet. Simply add 175 ml cold water and 2 tbsp rapeseed oil to the contents of the bag. Then place the mixture in the fridge for at least 30 minutes to soak.

In the meantime, cut the onions in half, cut them into slices and roast them in a large pan without oil over a high heat for about 8 minutes, stirring frequently.

Then deglaze the onions with the two glasses of vegan Phở broth and add the shiitake mushrooms to the broth. Bring everything to the boil and then simmer for 20 minutes over a low heat with the lid on.

You can now shape the fillets as desired and fry them with 2-3 tbsp rapeseed oil for 5-6 minutes over a medium heat. Then cut them into pieces and add them to the stock for the last 10 minutes of cooking time.

Then prepare the rice noodles and rinse them in cold water.

Now divide the rice noodles between the bowls, pour the broth over them and serve everything together with the vegan fillet, freshly chopped coriander, mung bean sprouts, Thai basil, finely chopped spring onions, chilli and lime wedges.

Sriracha and hoisin sauce are optional, but highly recommended for that extra dose of flavor!
