Rice pudding is not necessarily a sugar-heavy dessert. This coconut rice pudding with mango and toasted coconut chips shows you just how delicious vegan rice pudding can be.

Bring the rice, coconut milk, water, vanilla and agave syrup to the boil in a pan.

Then turn the heat down and cook for about 35 minutes, stirring occasionally, until the rice is soft, adding more water if necessary.

Toast the coconut chips in a pan without oil until golden brown. Mix the coconut blossom sugar and cinnamon. Pour the rice pudding into a bowl and top with the mango and passion fruit.

Finally, sprinkle over the toasted coconut chips and the cinnamon-sugar mixture.
