Even though it translates to banana bread, Banana Bread is more of a sweet cake - usually in a loaf pan. These gluten-free muffins are based on the taste of the classic. Our Banana Bread inspired muffins are moist, intense in flavor and gluten-free.

3 Bananas
1 tbsp. Baking powder
1 point of a knife Vanilla
150 g Buckwheat flour
50 g Teff flour
2 tbsp. Apple pulp
150 ml gluten free oat drink
40 g Walnuts
2 tbsp. Date syrup
1 tbsp. Lemon juice
3 tbsp. Chocolate drops
1 Coconut oil
  • Step 1/8

    Preheat the oven to 200 °C.

  • Step 2/8

    Mix the dry ingredients in a bowl.

  • Step 3/8

    Mash two of the three bananas with a fork and mix with the apple pulp, date syrup, milk and lemon juice in another bowl.

    Stir in the walnuts and chocolate drops.

  • Step 5/8

    Grease the muffin tin with a little coconut oil and pour the batter into the cups.

    Slice the third banana and put one slice at a time into a ramekin filled with batter.

    Bake the muffins for about 25 minutes.

  • Step 8/8

    Let the muffins cool down a bit after baking. Then you can take them out of the mold.
