Mashed potatoes were yesterday - add a little variety to your plate with this delicious pumpkin puree.

Wash the pumpkin, cut in half, remove the seeds and cut into slices.

Brush the pumpkin slices with 1 tablespoon olive oil.

Season with nutmeg, salt and pepper.

Place the slices on a baking tray lined with baking paper and bake in the oven at 200 degrees convection.

Then remove from the oven and process with a blender or masher to puree. Mix in 2 tablespoons of pumpkin seed oil.

Finally, top with pumpkin seeds.
