This is due to our switch to a different supplier. Thanks to his so-called ball mills, our new supplier can get the fat out of the cashews even better. As a result, the consistency can be more fluid - in terms of taste, our cashew puree will still transport you to seventh nut heaven, KoRo's word of honour. Speaking of taste: As a cashew puree newcomer, you might be surprised by the similarity in taste to peanut butter . However, the sweet, nutty taste is actually exclusively cashews. Cashews gehören zu den beliebtesten Nüssen. Dabei sind sie botanisch gesehen gar keine Nüsse, sondern Kerne. Die Cashewkerne für unser Cashewmus kommen aus dem Vietnam. Dort sitzen die Experten für Cashewbäume – aus Vietnam werden weltweit die meisten Cashewkerne exportiert.
Cashewbäume sind schnellwüchsig und lassen sich von langen Dürreperioden nicht beeindrucken. Sie wachsen teilweise über zwölf Meter hoch, was die Ernte der sogenannten Cashewäpfel mitunter schwierig gestaltet…
Um an die Cashewapfel zu gelangen, müssen die Bauern auf hohe Leitern steigen. Cashewäpfel sind im unreifen Zustand grün und färben sich zur Erntezeit gelb oder rot. Auch der Cashewapfel ist essbar und schmeckt ähnlich wie Birnen. Der große Schatz lauert aber im Cashewapfel: der Cashewkern.
Genauer gesagt befindet sich der Cashewkern im Pflanzenstiel des Cashewapfels. Um an den Kern zu kommen, wird die Frucht erhitzt und aufgeknackt. Tada, der Cashewkern ist geerntet. Da in jedem Cashewapfel nur ein einziger Cashewkern ist, muss für ein so großes Glas an Cashewmus eine ganze Weile gesammelt werden.
In unserem Cashewmus wird sogenannter Cashewbruch verarbeitet. Das bedeutet, dass die gebrochenen Cashews kleiner als 4,75 mm sind. Damit sind sie in einer guten Größe, um geröstet zu werden.
Nachdem die Cashewkerne den Mixer gesehen haben, sind sie ganz schnell viel kleiner. Bei der Vermusung ist wichtig, dass das Pürier-Gerät eine hohe Leistungsfähigkeit hat. Wenn Du in der WG-Küche mit einem handelsüblichen Mixer Cashewmus selber herstellen willst, wird dieser höchstwahrscheinlich überhitzen. Dabei gehen die wertvollen Nährstoffe der Cashewkerne verloren.
