In just a few minutes you can whip up this delicious, all-vegetable rice pudding with extra protein.
50 g | Cashew nuts (unsalted) |
120 g | Rice |
1 tbsp. | Cashewmus |
1 UNIT | Vanilla bean |
30 g | vegetable protein powder |
150 ml | Water |
2 tbsp. | Nuts |
1 Tsp. | Spices of your choice (tonka, cinnamon, speculoos) |
1 Pinch | Salt |
1 Tsp. | Sweetener (erythritol, agave syrup, panela) |
1 UNIT | small banana |

Make a nut milk from the cashews and water in a high-powered blender.

Add this to the rice in a pot, add vanilla pulp, salt and bring to a boil.

Simmer on low heat for about 5 minutes, remove from heat, let cool slightly.

Only then add the protein powder and cashew puree and stir well.

Arrange in a bowl. Garnish with banana slices and nuts.
