Preheat the oven to 180°C.

Line a baking tray with baking paper

Peel the watermelon and cut into 4x4x2.5cm "steaks".

Salt the watermelon "steaks" and then spread them evenly on the baking sheet lined with baking paper.

Bake the "steaks" in the preheated oven for 60 minutes.

Meanwhile, prepare the marinade: Finely puree all ingredients with the help of a (hand) blender.

Remove the baked "steaks" from the oven, cover with the marinade and let sit in the refrigerator for at least 3 hours (but preferably overnight) to allow the marinade to soak in.

Heat a non-stick skillet and sear the watermelon "steaks" for 2-3 minutes on each side until crispy.
