Using almond flour
We think: Almond flour should be used much more often in your kitchen for baking and cooking. In addition to a high fibre content and to being a source of protein, KoRo's ground and blanched almonds offer one thing above all: an intensely nutty almond flavour. To achieve this, we have not only ground our almonds, but also subjected them to a so-called blanching process beforehand. Blanching can also be described as "over-brewing". In the case of our almonds, we poured boiling water on top of our almonds and then cooled them down with cold water. Why? Because this not only makes it very easy to remove the almond skin, but it also results in a much more intense almond flavour and aroma. For more almond goodness, take a look at our shop. Wichtige Frage in Zusammenhang mit unserem Mandelmehl! Prinzipiell wird mit dem Begriff “blanchieren” eine kurz andauernde Behandlung eines Lebensmittels thermischer Art bezeichnet. Diese erfolgt mithilfe von heißem Wasserdampf oder kochendem Wasser. Zumeist findet diese Art von Behandlung Anwendung bei Gemüse. Im Zusammenhang mit Mandeln erreicht man damit den Vorgang des Schälens. Nach Übergießen mit heißem Wasser werden die Mandelkerne abgekühlt. Ziel der Maßnahme ist, neben dem Schälprozess, die Intensivierung des süß-milden Geschmacks der Mandel.
