Buckwheat - a wheat without wheat At a first glance, buckwheat seems to be a type of wheat, but that is not the case! Buckwheat actually does not have much in common with our usual wheat-cereals. Just like amaranth and quinoa, buckwheat is part of the so-called pseudo-cereals. Its peeled form looks very similar to wheat grain, but that's about the only similarity you will find. You will find countless buckwheat products in our shop. Along with our sprouted buckwheat pasta, buckwheat flakes and buckwheat oats we had to add a puffed version to our selection. Varieties & origins
Buckwheat
Buckwheat seeds have a greenish to beige coloration, and in shape they remind tiny pyramids. They are perfect to sprout, added to your porridge, and fit deliciously in a variety of recipes.
Buckwheat originally comes from Asia; arrived in Europe in the early Middle Ages, buckwheat has a short period of growth and thrives on lean soil, but is sensitive to cold. It has been a staple of Eastern European cuisine since ancient times, and Russia is the first documented country to have cultivated buckwheat. In 2017, 3.8 million tons of buckwheat were harvested worldwide. China is the largest producer of buckwheat, followed closely by Russia.
Production
Zugegeben: Buchweizengrütze wirst Du wahrscheinlich nur sehr selten pur essen. Uns schmeckt der Buchweizenschrot im Smoothie auch deutlich besser. Um Konsistenz, Geruch und Geschmack beurteilen zu können, mussten wir alles ohne pflanzliche Milch oder Obst dazu probieren. Du kannst uns glauben, bei diesem Tasting haben wir mehr als nur 2 Gläser Wasser getrunken.
Die Hauptanbaugebiete liegen in Nordamerika und Asien. Wir wären aber nicht KoRo, wenn wir nicht auch Erzeuger in Europa gefunden hätten. Unser Buchweizen stammt deshalb sogar von Feldern aus Deutschland.
Auf so einem Feld findet der biologisch-dynamische Anbau unserer Buchweizen-Pflanzen nach dem Demeter-Standard statt. Im Mai beginnt die Aussat, damit Du spätestens an kalten Wintertagen Dein warmes Buchweizen-Porridge genießen kannst.
Das freut besonders Menschen mit Zöliakie: Buchweizen sieht zwar ähnlich aus wie Getreide, ist aber eigentlich keins. Die Pflanze zählt zu den Knöterichgewächsen und enthält deswegen auch kein Gluten.
Nach der Ernte wird das Pseudogetreide in dieser Fabrik geschrotet. Dabei werden die Achänen, so nennt man die Samen der Pflanze, einfach nur klein gerieben. Schon ist die Buchweizengrütze bereit für seine Reise in das KoRo-Lager.
