What are Azuki beans?

Also called Adzuki, Azuki beans are red beans that look like kidney beans at first glance. However, you can easily tell them apart from other varieties, including kidney beans, by the white line on their skin. Their taste is uniquely sweet and nutty, and they are also rich in protein and fibre. Last but certainly not least, our beautiful beans are also organic!

How to prepare Azuki beans

To turn dry Azuki beans into a real treat, you first have to soak them in four times the amount of water for around 12 hours or overnight. Then rinse thoroughly before cooking: use 500 ml of water for 50 g of beans. As soon as the water boils, reduce the heat and let the beans simmer with the lid on for around 35 minutes. You can then optionally add a little salt (if you add it beforehand, the cooking time can be longer). Once you open the bag, we recommend you store the rest in one of our beautiful large Ball Mason jars, so that they stay fresh for the longest time possible!

Azuki beans have been cultivated for 2000 years, mainly in China, Korea and Japan, and are also used as medicinal plants in traditional Chinese medicine. The plant feels particularly well at an average annual temperature of 15 to 30 °C. Frost, on the other hand, it does not like so much.
Azuki beans have a unique sweet-nutty taste. This makes them especially delicious in curries, salads, bowls or soups. You can even use them in desserts, for example, processed into anko paste. Definitely. Anko paste is a sweet red bean paste from Japan. For this you need:

Put the soaked azuki beans in a pot, cover with water and boil briefly. Then drain the water before covering the beans with fresh water (about 1:2 ratio) and boil for about an hour until soft. The water change is necessary so that the beans do not taste bitter afterwards.

When the azuki beans are soft, drain the cooking water into a bowl. Then stir the sugar and salt into the azuki beans and puree to a paste using a blender or a hand blender. If you find the consistency too thick, you can easily stir in some of the cooking water. You can use the Anko paste pure, on bread or as a base for other desserts such as brownies or mochis.

These azuki beans impressed me with their appearance and taste.

This is the first time I've bought azuki beans and they worked really well when making the red bean paste (for mochis). After soaking the beans overnight, they took just an hour before I could process them further. I should perhaps have looked through the beans a little more carefully before cooking them, as I noticed a few atypical beans (possibly peanuts?) in the cooked state, which I would otherwise have removed. All in all, the beans looked fresh and intact without any breakages and I couldn't have wished for more in terms of taste!
